The convenient lunchtime alternative to the sandwich, were we swap bread for rice and increase the filling and the variations are infinite.

This is a super easy and convenient meal to cook. Its a more nutritious alternative to a sandwich, with endless variations on what you can accompany the rice with. A poke bowl is just a base or rice, with a layer of veg, a layer of protein, and your favourite sauce drizzled on top.

Ingredients

• 125 grams of cooked rice.

• Favorite protein- beef, chicken, prawn, salmon, etc.

• Favorite veg- choose between salad style veg, cooked green veg, pickled veg , or all three!

• Seasoning- some examples are sesame seeds, spring onion, nori seaweed

• Sauce- my preference is a simple soy sauce.

Method

1. Microwave rice is fine, I prefer mines cook in a rice cooker.

2. Cooking the protein. So many options here. For those in a rush, you could buy smoked salmon, pre cooked chicken, pre cooked prawns, or sliced beef. For those who want something fresher fry either, prawns, steak or chicken.

3. The veg- for those wanting speed just slice up a variety of cold salad veg, the more the better. I'd go with spinach, cucumber, peppers, tomatoes, and mushrooms personally. For an more nutrient dense option, I cook bitter green veg to go with it. My favourite is tenderstem broccoli and kale, boiling, sauteing or stirfrying.

4. Sprinkle your seasoning on top. I tend to have spring onion and norri seaweed. But nuts or seeds are great too.

5. Finally just pour over your favourite sauce. I'll just generally go with a tablespoon of light soya sauce.
